Fresh Salsa

We love a fresh bowl of salsa here at our house.  I also love it because it gets my husband to eat a lot of vegetables including tomatoes, which I have a hard time accomplishing otherwise.  Salsa is a great way to use up those end-of season tomatoes and it's full of healthy ingredients too.  This is our favorite salsa recipe-it is just bursting with fresh flavor.  I originally found this recipe somewhere on Allrecipes.com but I have tweaked it a little bit to suit our tastes.
Ingrediants:

• 2 Jalapeno Peppers
• 4-5 cloves garlic, minced
• 1 onion Chopped
• 1 Tablespoon sugar
• 1/2 teaspoon salt (feel free to eliminate this if you like)
• 1/4 teaspoon ground cumin
• (1) 10 oz. can tomatoes with green chile peppers (I use a can of medium ro-tel)
• 4-5 medium size fresh tomatoes, 3-4 large size, or (1) 28 oz. can of canned tomatoes or (2) 14 oz. cans.
• 1/4 cup of Chopped Fresh Cilantro
• About a Tablespoon of fresh lime juice (you can omit this is you don't have any lime)

Directions:  Roast the Jalapeno Peppers in the oven at about 300 degrees until they begin to shrivel:  my Jalapenos here shriveled more after removing them from the oven.

 Cut each of the Jalapenos into three pieces.  Add the Can of tomatoes and green chile peppers, Sugar, salt, cumin, onion, garlic, lime juice, and jalapenos to the bowl of a food processor or blender.  I then pulse these ingredients about 6 times until they are evenly chopped up:  

 Now add the tomatoes, and Cilantro (If you are using fresh tomatoes cut them into at least 8 wedges per tomato before adding). Pulse again until the mixture is the consistency that you would like (we like ours pretty fine). 

This recipe makes one large, quart-size canning jar full (I don't can mine though):

Financial Goals

As fun as it can be to get things for free, that alone does not motivate me to work hard to save my family money.  Living like no one else now, does not seem like much fun without knowing that later on we will be able to LIVE like no one else.  Having some real attainable, financial goals to work towards makes it more rewarding to do without some things that we may like to have.  Everyone should have goals in life, including some sort of financial goals.  My husband and I work together to evaluate what is really important to us in life and then we set our financial goals from there.  

Try to make your goals attainable and challenging at the same time. Your goals don't have to be big, they can be as simple as saving up gas money for a small car trip.  Try to set yourself a realistic time frame for meeting your specific goal.  Your goals also don't have to be set in stone, if somethings changes, you can re-evaluate your goals and work from there.  My husband and I try to sit down and go over our finances and evaluate our financial situation at least twice a year.  If we aren't getting any closer to our goals then we know something has to change:  we either need to figure out how to bring in more money, or cut down on money going out. 

Although my husband and I have a number of financial goals, our main one right now is to pay off the principle on our home mortgage.  We hope to accomplish this goal within 2 years.  As of September, we have paid off 56.7%.

It can be very discouraging if you have large financial needs and little money coming in.  Try to get everyone in your household on board with your current financial goals.  Try making a chart showing how much closer you have gotten to achieving your goals each month if you think this would motivate you.

I will try to post monthly updates on our financial goals because it helps to motivate me and hold me accountable.  Please feel free to share your own progress toward your goals in the comments below!

Saving Money by Negotiating Late Fees and Overdraft Fees

Have you ever accidently paid a bill or credit card late or let your bank account become overdrawn, and found yourself strapped with late fees or penalties?  I have done both of these by mistake.  I have gotten much better about paying our bills on time and keeping track of our bank balance over the last several years, but recently I had a balance on my Menard's credit card which I hardly ever use, and I forgot to pay it.  Of course then I had a late payment fee on my account.  I called the credit card company and asked them to do a one-time wavier of the fee on my account because it was an accident.  The individual I talked to was super nice and replied that sure, they would take that late fee off right away for me.  Now, of course your results may be different depending on who you talk to and what kind of shape your account may be in, but it never hurts to ask.  

I also had a similar experience with our bank account being overdrawn and I got (3) $25 overdraft fees for a couple $5-$10 transactions.  I called the bank and they did take the fees off because we had never had anything like that happen before.  Your bank may also allow you to link your accounts if you have both a checking and savings, so that if your checking account becomes empty, the money will come out of your savings account preventing overdraft fees.  

If you find yourself faced with late payment fees or overdraft fees consider talking to the company or your bank and asking them to remove the fees or at least to have them reduced.  You just might be surprised by the results you may get.
